Now Making Chef’s Knives In CPM-S45-VN Stainless Steel
Just got my first orders for Chef’s Knives in CPM-S45VN Stainless Steel so I decided to do an update to let people know about this awesome steel. First it’s new, really new. An upgrade to the amazing CPM-S35VN Stainless Steel, the manufacturer was able to give this new steel better edge holding, and better corrosion resistance, the perfect combination for a chef’s knife.
I am testing the new steel as we speak but my research tells me that we are going to be able to get CPM-S45VN up around 62-63HRC, so a bit harder than the CPM-S35VN that I have been using up to date. This allows for a blade that will hold its edge better and longer than most other kitchen knife steels. Third party testing shows a significant improvement on the CPM-S35VN. As with CPM-S35VN, I recommend diamond sharpening tools.
I am working on a Demo knife to make available to reviewers or if you just want to test it out. It is going to be an 8 inch “Kitchen Safe” model with Black Canvas Micarta handles, red liners, and stainless steel bolsters. It should be done in a couple of weeks. So, what’s the downside? CPM-S45VN is a bit difficult to get right now. If you are looking to order, order soon as it may take a while to get the steel in. The other downside is price – the new CPM-S45VN is more expensive than most other kitchen knife steels, but for those that want the best, it isn’t a huge difference in cost.
